Dentex dentex
The big pink predator of Mediterranean reefs β a bream with dog-like canine fangs, built to ambush fish and squid instead of grazing algae. A jigging and live-bait prize, and the most heavily toothed member of its family.

Identifying features
- Pink to silvery-pink body β young fish sprinkled with bright blue spots
- Fearsome dog-like canine fangs at the front of both jaws, visible when the mouth closes
- Large head with a steep profile; old males grow a distinct bulging forehead
- Strong spiny dorsal fin and no dark spot at the pectoral-fin base like the red porgy
- Deep, powerful body for a bream β this is a predator, not a grazer
Habits
- A solitary, territorial reef predator that ambushes fish and squid from rock cover
- Feeds hardest at first and last light and when currents push bait over the reef
- Young fish show bright blue spots that fade as they grow
- Old males develop a pronounced forehead hump and lose most colour, turning silvery-grey
- Moves deeper in winter and shallower over reefs in spring and autumn
Distribution

- Deep rock ledges of the French CΓ΄te d'Azur
Where they live
How to catch them
Vertical jigging over deep reefs Boat
Rig: Medium-heavy jigging rod with 100-200 g jigs or large soft plastics, fished vertically over reef pinnacles in 100-260 ft (30-80 m)
Bait/lure: 100-200 g jigs or soft plastics
Key tip: Fish first and last light and keep the jig tight to bottom β dentex strike upward from the rock.
Live-baiting from deep rock ledges Rock fishing
Rig: Strong rock rod with a live-bait rig, live squid or whole sardine on a 5/0 circle hook in front of drop-offs
Bait/lure: Live squid or whole sardine
Key tip: Let the bait work but keep light, constant contact β a dentex take is a single violent hit.
